Understanding Decaffeination

Decaffeinated tea is achieved using one of two processes. One is a method which employs a chemical solvent, ethyl acetate. The ethyl acetate is passed through the leaves allowing the caffeine to bond to the chemical, removing the caffeine in the process. This method is relatively inexpensive and has been used for many years.

Another method, carbon dioxide decaffeination, or CO2, is a method using tremendous pressure in a chamber of liquefied carbon dioxide gas (the gas that we breathe out and that plants absorb). The carbon dioxide bonds with the caffeine, and when the pressure is released the caffeine is removed. While this method tends to be more expensive, it uses no chemicals and yields much better flavour. The CO2 method leaves approximately 90% of the original antioxidant content intact, whereas the chemical process leaves only approximately 20% of the natural antioxidants in the tea leaves.

AFTERNOON: Drink 1 to 2 cups of White tea to help block absorption of the fats in your lunch and to prevent fat storage.  My white tea recommendation is Pai Mu Tan.
